Growing up, most of the recipes my mother used that weren't passed down from her mother or grandmother, came straight from The Joy of Cooking. When I moved out and got my first apartment, my mother gave me my own copy and I have used it faithfully ever since. Every time I cook out of that old book, I feel like I am making something straight from her!
This recipe was inspired by The Joy of Cooking's recipe for Basic Cobbler Biscuit Dough. I love finding a recipe that I enjoy and being able to remake it so that it fits my low-carb lifestyle! I cannot tell you the level of excitement I felt when I realized that this worked! I was skeptical, because more often than not, when a recipe is remade, it tastes, well ... low-carb. I didn't want that. I wanted the real thing!
King Cakes! They're Everywhere!!!!! Well, if you're in Louisiana they are. And this post is a bit late in coming along, because (unless you're reading this any time in the future) today is Fat Tuesday. Honestly though, it's taken me the entire Mardi Gras season to come up with something that might actually feed my craving for King Cakes.
Yes, I know, this isn't in the shape of a King Cake, but if you really wanted to, you could bake this in a bundt pan and achieve the desired affect.
